Just about everyone loves energy bars. Quick, convenient and portable, a good vegan energy bar can serve as a meal replacement, pre or post workout treat, or a handy protein source. Eating snack-size protein bars can help reduce overeating between meals. Unfortunately, many store-bought bars are high in sugar or sodium, and some contain preservatives, animal products, or filler ingredients. For cheaper, healthier energy options, you’re really better off making your own!

INGREDIENTS

 

  • 2/3 cup dried apricots, soaked 30 minutes in water
  • 3 tablespoons apricot water (use the water from the dried apricot soaking)
  • ¾ cup Medjool dates, pitted
  • 2 ½ teaspoons vanilla extract
  • 1 ¼ cup almonds
  • ¾ cup rolled oats
  • ¾ cup dried cranberries
  • ¾ cup shredded coconut
  • 1/3 cup pumpkin seeds
  • ½ teaspoon unrefined salt
  • ½ scoop Classic Plus natural protein

DIRECTIONS

Place apricots, dates, apricot soak water and vanilla in a food processor and process until mixture becomes a paste. Add the almonds, oats, cranberries, coconut, pumpkin seeds salt and protein, and pulse several times until incorporated. Roll 1 tablespoon of mixture between hands to form a ball. Repeat until mixture is gone. Stored in an airtight container in the refrigerator, Apricot Energy Rounds will keep for three weeks.
