Apple Fennel Salad with Lemon Zest

INGREDIENTS

  • 2 cups fennel, thinly sliced
  • 2 cups apple, thinly julienned
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon apple cider vinegar
  • 2 1/2 tablespoons olive oil
  • 1 tablespoon fresh thyme, minced or 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • Cracked black pepper, to taste
  • 1⁄2 cup chopped walnuts

DIRECTIONS

1.To julienne apple and fennel, slice thinly in one direction and then slice in opposite direction to create matchsticks, or use a mandolin on a thin slice setting.

2. In a medium size bowl, toss together all salad ingredients except walnuts. Let marinate at room temperature up to 4 hours. Top with walnuts just before serving.

Apples and fennel make a sweet, fresh, and crisp combination. Both are loaded with fiber, nutrients, and properties that are excellent for digestion. This salad is perfect in the summertime alongside other recipes that are fresh and wholesome.
