Almond Coconut Ginger Fruit Smoothie

Ginger is a powerful antioxidant that does your body good. So put some spring into your step, and energize yourself. Feel free to use your favorite fruits, but this smoothie tastes great as is. This recipe serves 2.

Almond Coconut Ginger Fruit Smoothie

INGREDIENTS

  • 1 cup raw almond nut milk (see recipe at end)
  • ¾ cup unsweetened coconut milk (used only in the making of above nut milk)
  • ¼ fresh squeezed orange juice
  • 1 tablespoon agave
  • ½ cup frozen mango
  • 5 large frozen strawberries
  • ½ cup frozen peaches
  • ½ banana
  • 3 tablespoons grated fresh ginger (about 2.5 inches of ginger root, peeled)
  • ½ teaspoon ground ginger
  • ¼ teaspoon cinnamon
  • Pinch of cloves

Almond Coconut Nut Milk

Soaking Process

  • ½ cup slivered almonds
  • 1 cup water

Blending Process

  • Use soaked almond slivers
  • 1 cup water
  • ¾ cup unsweetened coconut milk

DIRECTIONS

Soaked Almonds

Soak almond slivers overnight (6–8 hours minimum) so they are ready for blending in the morning. I soaked about 12 hours to avoid the straining process. I also used slivered almonds because I find the result smoother and nicer.

In the morning, rinse the soaked almonds and blend with 1 cup water and 3/4 cup coconut milk until smooth.

Smoothie

Place all ingredients into blender and blend until smooth. Enjoy!
