Tropical Chocolate Peanut Butter Bars

For a bar that is more meal than it is snack, you have got to try the little bit of heaven found in these tropical chocolate peanut butter bars.

Tropical Chocolate Peanut Butter Bars


  • ½ cups Medjool dates pitted
  • 1 cup of shredded coconut
  • ¾ cup pecans
  • 1 ½ cup oats
  • 1 cup brown rice cereal
  • 1 cup chopped dried pineapple
  • 1 cup chopped dried mango
  • ¾-1 cup chopped raw cashews
  • ½ cup mini chocolate chips
  • 1 scoop Sunwarrior illumin8 Vanilla Bean or Warrior Blend vanilla
  • Pinch of sea salt
  • 1 ½ cup peanut butter (I used PB&CO Smooth Operator)
  • ½ cup honey, Agave, or maple syrup

  1. Pulse Medjool dates, shredded coconut, and pecans together in processor then press into bottom of parchment lined cake pan
  2. In separate bowl mix oats, rice cereal, pineapple, mango, cashews, chocolate chips, illumin8, and sea salt
  3. In small sauce pan melt peanut butter and honey together
  4. Pour melted PB mixture over dried mix and stir together till all incorporated.
  5. Spread over top of date, pecan, and coconut mixture. Press down firm and chill in fridge.
  6. I like to melt dark chocolate and spread on top of that and chill again for a few minutes.
  7. Cut into bars and enjoy!!
  8. Store in fridge

Makes approx. 12 bars or 24 squares
