Win your entire family over with these fabulous, crusted, caramel colored, roasted gems or sweet garlic tofu nuggets. This is where dinner gets amazing.

Tofu on its own is pretty much rather bland, yet its sponge-like texture makes it perfect for absorbing flavors so be sure to season or marinate as you’ll do in this recipe. Blending a few tried and true ingredient combos and paying salute to the popular affliction for sour, sweet, savory and spicy combos (with a touch of astringency for intrigue) make for a sure-fire flavor enhancing winner. This is one of those recipes you keep close on hand until you know it by heart. Then you can shift it up with the addition of various spices such as curry powder, garam masala, Thai curry, etc. Now, get that marinade going and make great use of the oven being on and roast some veggies to round out your meal. See the tips below.

1. Combine all the sauce ingredients, leaving sesame seeds aside. Remove tofu from the tea towel, cut into 1-inch cubes and toss in marinade. Cover and chill 2–24 hours.

2. When ready to bake, preheat the oven to 350F, dredge each cube with the sesame seeds and skewer on presoaked bamboo sticks. Arrange on a rack, placed over a parchment covered baking sheet and bake for in the preheated oven approx. 20–25 minutes or until bronzed and firm. While baking, prepare the spicy drizzle.

3. When ready to enjoy, serve alongside sautéed or roasted veggies (that you baked at the same time such as cauliflower, broccoli, Brussels sprouts, asparagus, parsnips, Jerusalem artichokes or celery root, etc.). Drizzle with the sweet and spicy ginger sauce.

1. Combine all ingredients and heat gently to melt sugar (if using) and mellow flavors. Set aside. Drizzle over the tofu kabobs and top with the orange zest and herbs.

TERI’S TIP: For a fun family meal, roasted sweet potato, parsnip, carrot or zucchini fingers are a perfect pair. Just be sure to include some non-starchy veggies such as leafy greens or steamed green beans.
