Ingredients

- 1/3 cup Sunwarrior Organic Coconut Milk Powder
- 1-2 tablespoons red Thai curry paste, to taste
- 1 tablespoon fresh lime juice
- 1 tablespoon coconut aminos
- 1 tablespoon Sunwarrior Organic Lion’s Mane Mushroom Powder
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 1 tablespoon lime juice
- 1/8 teaspoon coconut sugar
- 1 can chickpeas
- 2 cups cauliflower
Directions
- saute cauliflower with a tablespoon olive oil in a saucepan until softened. Add the rest of the ingredient and heat on medium high for 3-4 minutes then simmer 8 -10 minutes to infuse flavors. Taste and adjust seasonings if needed.
