Ingredients

For the Dough:

  • 2 ¼ teaspoons active dry yeast
  • ¾ cup warm water
  • 2 cups all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 teaspoon salt

For the Sauce:

  • 1 can (15 ounces) tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons Sunwarrior Lion’s Mane Mushroom powder
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • Salt and pepper to taste

For the Toppings:

  • 1 cup vegan mozzarella cheese
  • 1 cup sliced mushrooms
  • Fresh basil leaves

Optional additional toppings

  • 1 bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • ½ cup black olives, sliced

Directions

Making the Dough:

In a large bowl, dissolve the sugar in warm water and sprinkle the yeast over the top. Let it sit for about 5 minutes, or until it becomes frothy.

Add the flour, olive oil, and salt to the yeast mixture. Stir until a dough forms.

Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes, until it is smooth and elastic.

Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Making the Sauce:

In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

Stir in the tomato sauce, tomato paste, mushroom powder, oregano, basil, sugar, salt, and pepper. Let the sauce simmer for about 15 minutes, stirring occasionally. Adjust the seasoning to taste.

Assembling the Pizza:

Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up as well.

Punch down the dough and divide it in half. On a lightly floured surface, roll out each half into a round pizza shape, about 12 inches in diameter.

Spread a generous amount of tomato sauce over each pizza base.

Sprinkle the vegan mozzarella evenly over the sauce. Arrange the sliced mushrooms on top of the cheese. (if using other toppings, add those as well)

Transfer the pizzas to the preheated oven (use a baking sheet if you don’t have a pizza stone). Bake for about 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.

Remove the pizzas from the oven and sprinkle fresh basil leaves over the top. Let them cool for a few minutes before slicing.

This vegan pizza with Sunwarrior Lion’s Mane Mushroom powder in the sauce offers a delightful twist on a classic favorite. The umami-rich mushroom powder elevates the tomato sauce, providing a depth of flavor that complements the vibrant vegetable toppings perfectly. Enjoy this pizza fresh from the oven, and savor the rich, satisfying taste that proves vegan cooking can be just as indulgent as traditional recipes. Perfect for family dinners, gatherings with friends, or any time you’re in the mood for a delicious, plant-based meal, this pizza is sure to become a favorite. Bon appétit!
