Vegan Cajun Coleslaw

Ingredients

  • 2 teaspoons coconut sugar
  • 1 small green and 1 small purple head of cabbage, sliced thin
  • ¼ cup carrot shreds
  • 2 cups vegan mayonnaise
  • 3 tablespoons ketchup
  • 2 tablespoons Creole, Cajun, or deli-style mustard (not yellow)
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh squeezed lime juice
  • 2 teaspoons prepared horseradish
  • 2 cloves garlic, chopped
  • 1 teaspoon vegan Worcestershire sauce
  • 1 teaspoon Sunwarrior Sea Salt
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper

Directions

Mix mayonnaise, ketchup, creole mustard, parsley, lime juice, horseradish, garlic, Worcestershire sauce, sea salt, paprika, and cayenne paper. Add sugar to mixture. Let sit 5 minutes for sugar to dissolve. Add coleslaw and stir until cabbage and shreds are well coated. Refrigerate until serving (overnight is best so the flavors have time to blend).
