Supreme Vegan Nachos

You requested it and celebrity vegan chef Jason Wrobel delivered with a recipe for mouth-watering, meatless nachos. To make the “meat,” begin by adding walnut pieces to a food processor. Add in coriander seed, cumin, coconut aminos, and black pepper. Give that a go in the processor until it’s a good beefy texture (make sure not to over-process).

Next, warm up some vegan cheese over the stove. And now you’re ready to build your nachos. Layer tortilla chips with cheese sauce, black beans, roma tomatoes, and the walnut “meat.” Next add salsa, guacamole, and any other favorite nacho toppings.

Supreme Vegan Nachos

Ingredients:

Walnut “meat”

  • 1 ½ teaspoon coriander seed
  • 3 teaspoon cumin
  • 4 tablespoon coconut aminos
  • Ground black pepper

Supreme Vegan Nacho Ingredients (choose your favorites!)

  • vegan_cheese_picChips
  • Teese Vegan Nacho Cheese
  • Walnut meat
  • Black beans
  • Roma tomatoes, diced
  • Salsa (I mixed some Liquid Light into it)
  • Guacamole
  • Radish, sliced
  • White onion, diced
  • Black olives
  • Jalapeño peppers
  • Scallions
  • Cilantro

Method:

Combine all “meat” ingredients in food processor. Pulse until walnuts are in a mealy consistency.

Heat up cheese on stove for about 3 minutes or until pourable.

Put some chips on a dish and prepare for topping.

Top chips with cheese, walnut “meat”, and your favorite toppings from the list above or your own list. Finally, share (or not) and enjoy!
