Strawberry Apple Fruit Leather

Psyllium husk has a range, and it’s sweet! 

Psyllium husk isn’t exactly the ingredient that gets people rushing into the kitchen. It’s more commonly associated with fiber supplements than snack time, but in this recipe, it’s the secret that gives this strawberry fruit leather its perfectly pliable and chewy texture. 

So yes, you’re getting a naturally sweet snack made from real fruits, with an extra dose of soluble fiber thrown in. Turns out psyllium husk isn’t just for your pantry’s “healthy stuff” shelf. It’s also pretty good at making fruit leather you’d happily keep reaching for. 

So, if you’re after a snack that’s simple, fruity, and just a little bit smarter, this one’s worth a try. 

Ingredients 

  • 1 (16 oz) clamshell fresh strawberries, hulled 

  • 2 medium apples, peeled and chopped 

  • 1/2 cup apple juice 

  • Juice of 1/2 lemon 

Instructions 

  1. Preheat oven to 170°F. 

  1. Blend the strawberries, apples, apple juice, lemon juice, and psyllium husk until completely smooth. 

  1. Spread into an even 1/8-inch layer on a silicone-lined baking sheet. 

  1. Bake for 6-8 hours, or until it feels dry to the touch but still flexible. 

  1. Cool completely, slice into strips, and roll in a parchment paper.
