Raw Vegan Superfood Energy Bars

Zain Saraswati Jamal, mind, body & spirit coach, shows us how to make her super easy, superfood energy bars. These bars are rich in Omega 3 fatty acids, magnesium, fiber, iron, and protein, making them a nutritional powerhouse. Begin by adding to your processor walnuts (which are amazing for the brain), pumpkin seeds, flax seed (to help keep you regular), hemp seeds, sunflower seeds, and chia seeds. Next add vanilla Sunwarrior protein, raisins, and dried coconut. Process. Add medjool dates (used as a sweetener and a binder) and coconut oil, then process again.

You should have a dense, sticky texture, but if it is still dry, add more coconut oil, and blend again. After you have the right consistency, press into a pan and pop them in the freezer. For extra yumminess, make a chocolate sauce by combining cacao powder, coconut oil, and stevia, and drizzle on top of the bars. Cut into squares and enjoy this raw, vegan protein treat.

Raw Vegan Superfood Energy Bars

Ingredients:

  • 1 cup walnuts
  • 1 cup pumpkin seeds
  • 1 cup flax seeds
  • 1 cup hemp seeds
  • 1 cup sunflower seeds
  • 1 cup chia seeds
  • 1 scoop Sunwarrior protein powder
  • 1 cup raisins
  • Dried unsweetened coconut powder
  • Medjool dates
  • Organic coconut oil

Method:

recipe_energy_bar_picKeep in mind all your seeds and nuts should be raw and unsalted. Add all ingredients except dates and coconut oil to your food processor. Blend until powdered, about 15 to 20 seconds. Then add dates and coconut oil. Blend about 15 seconds more. It should be dense and sticky. If the mixture does not hold together, add coconut oil and blend again. Add mixture to pan and press down firmly. Freeze, slice, and then enjoy. Keep them with you in your bag for a quick energy treat.
