Protein Power Sunbutter Truffles

As a passionate advocate for fabulous food coupled with fantastic health, creating nutrient dense recipes infused with flavor is my focus. Many clients are in search of a wholesome yet somewhat decadent snack to sustain them for workouts or midday pick-me-ups. These raw cacao truffles deliver rich and satisfying taste along with quality vegan protein, healthy fats, quality fiber and antioxidant rich vitamins and minerals. Even better, they are super easy to make and store well. You can count on finding them in my freezer most of the time. Give the recipe a test and let me know what you think.

Rich in healthy fats, including omega 3, these anti-inflammatory power balls are also wonderfully mineral rich and abundant in Vitamin E. Besides being a fabulous pre-workout fueler, with the added edge from the raw cacao and coconut they’re just yummy at any time. Make a batch and store in the freezer for a fabulous grab and go snack.

Protein Power Sunbutter Truffles

Ingredients:

  • ½ cup vanilla Warrior Blend protein powder
  • 6 tablespoons raw cacao powder
  • 3 tablespoon chia seeds, roughly ground
  • Pinch of quality sea salt, to taste (I use Maison Orphee or Earth Circle)
  • 3–4 tablespoons raw honey or maple syrup, or a combo (stevia can be substituted)
  • 2 tablespoons Earth Circle virgin organic coconut oil, gently warmed to melt
  • 6 tablespoons Sunbutter, organic or crunchy at room temperature
  • Toppings: Warrior Blend chocolate protein, organic sesame, hemp seeds, or coconut flakes
  • Optional: 1 teaspoon real vanilla, liquid or powder

Directions:

In a large bowl, measure the protein powder, cacao, chia seeds and sea salt, mix to blend. Add the remaining ingredients and stir well to form a thick dough. It’s easiest to mix with your hands. Adjust the amount of nut butter, honey, coconut oil, dry ingredients if needed to ensure the dough sticks together and suits your taste buds.

Chill the dough until firm enough to shape into 1 inch balls then using a little bag or container shake each truffle in the Sunwarrior protein powder or the sesame/hemp seeds or coconut. Store these in the refrigerator or freezer. Makes approximately 10–12 balls.

Teri’s Tip:

The amount of honey or maple syrup used will vary pending on what protein powder and Sunbutter you’re using.If they’re sweetened you likely will need less if any honey, maple syrup or stevia. Let your personal preference be your guide in all your food preparation.
