Protein Chocolate Peanut Butter Mug Cake
Ingredients:
- 1 scoop Sunwarrior Active Protein, PB Choco flavor
- 3 tablespoons oat flour
- 1 tablespoon Sunwarrior Cacao powder
- 1 tablespoon peanut butter (creamy or crunchy)
- 1 tablespoon sweetener (such as maple syrup or agave nectar)
- ¼ teaspoon baking powder
- 3 tablespoons almond milk
- ½ teaspoon vanilla extract
- 1 tablespoon Sunwarrior Chia Seed, mixed with 3 tablespoons water (as an egg substitute)
Directions
- Preheat your oven to 350°F (175°C).
- Lightly grease a small oven-safe ramekin or baking dish with a bit of cooking spray or a drop of oil to prevent sticking.
- In a small bowl, mix 1 tablespoon chia seed with 3 tablespoons water. Let it sit for about 5 minutes until it thickens.
- In a separate bowl, combine the Sunwarrior Active Protein, Sunwarrior Cacao powder, and baking powder. Mix well to ensure even distribution.
- Add the peanut butter, sweetener, non-dairy milk, vanilla extract, and the prepared chia egg to the dry ingredients. Mix thoroughly until you get a smooth batter. Make sure there are no lumps.
- Pour the batter into the prepared ramekin. It should fill the ramekin about halfway to allow room for rising.
- Place the ramekin in the preheated oven and bake for 12-15 minutes. The exact time can vary depending on your oven. The cake is done when it has risen and is firm to the touch but still moist inside. A toothpick inserted into the center should come out mostly clean with a few moist crumbs.
- Allow the cake to cool for a few minutes. You can enjoy it directly from the ramekin or transfer it to a plate.
Optional Toppings:
- A dollop of coconut whipped cream
- A drizzle of extra peanut butter or chocolate syrup
- Some fresh berries or banana slices
- A sprinkle of chopped nuts or vegan chocolate chips
Tips:
For a more indulgent treat, you can add a few vegan chocolate chips or a small piece of vegan chocolate in the center of the batter before baking for a gooey core.
Adjust the sweetness to your preference by adding more or less sweetener.
You can use any flavor of Sunwarrior Active Protein if you want to experiment with different tastes.
Enjoy your delicious, vegan Chocolate Peanut Butter Mug Cake baked to perfection in the oven!
