Cool October mornings are made better with pumpkin pancakes! These are so good, you’ll want to eat them for lunch and dinner too. Even better, these pancakes can be whipped up in less than 15 minutes and will power you through the entire day.
Perfect Protein Pumpkin Pancakes
Ingredients
- 1 ¼ cups flour
- ½ cup pumpkin puree
- 1 cup almond milk
- 1 scoop Sunwarrior Active Protein, vanilla
- 1 tablespoon melted coconut oil
- 2 teaspoons pumpkin pie spice
- 1 tablespoon baking powder
- 2 teaspoons maple syrup
- 1 teaspoon vanilla extract
Directions
Preheat griddle or pan with coconut oil on medium heat.
Mix all ingredients together.
Drop 1/3 cup of mixture at a time on heated pan. When the pancake starts to bubble, flip and cook for another 2 minutes.
Serve with maple syrup, pecans, and chocolate.
