No Bake Pumpkin Protein Bites

Ingredients:

  • ½ cup chopped pecans
  • 1 cup medium size dates (pitted)
  • 1/3 cup organic pumpkin puree
  • 1 scoop Sunwarrior Warrior Blend, Gingerbread flavor
  • ¼ cup chocolate chips
  • 1 teaspoon pumpkin pie spice
  • 1 ½ teaspoon organic vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon sea salt
  • ¼ teaspoon nutmeg

Directions:

1.Using a food processor, grind the pecans for 1-2 minutes until a fine texture is formed.

  1. Combine all other ingredients in the food processor and grind for a few minutes to form smooth batter (make sure large pieces of dates are not left behind - you may need to move the batter around with a spoon and the continue grinding to ensure this doesn’t happen).
  2. Roll into bite-size balls (about 12-15 depending on size).
  3. Store in refrigerator to set for 30 minutes before eating.
  4. Enjoy!
