Mushroom Dumplings

Ingredients

  • 1 pkg gyoza wrappers
  • 2 tablespoons avocado oil
  • 2 cloves garlic, minced
  • 1 spring onion stalk, chopped finely (reserve 1 tsp for dipping sauce)
  • 2 cups mushrooms (shiitake, baby portabella), finely chopped
  • 1 teaspoon Sunwarrior Lion’s Mane powder
  • ⅔ cup Chinese celery, finely chopped
  • ½ cup firm tofu, finely diced
  • 1 tablespoon soy sauce + extra for dipping
  • Pinch salt and pepper
  • Small bowl of water (for closing gyoza wrappers after filled)

Directions

In a medium skillet, warm avocado 1 tbsp oil over medium heat. Once warm, add garlic and stir for about 30 seconds until fragrant. Add prepared mushrooms, spring onion, and celery. Stir until well combined.

Cook the mushroom mixture for approximately 5 minutes on medium-low heat. The water from the mushrooms should be cooked out.

Add soy sauce, Sunwarrior Lion’s Mane powder, salt, and pepper. Stir. Remove from heat and cool. Add tofu and mix together until well incorporated.

Wrap mushroom mixture inside gyoza wrappers as directed on the package. You may have extra wrappers left depending on how much you filled them)

In a skillet, warm the remaining oil. Arrange the filled dumplings over medium heat. When slightly browned, add enough water to cover the bottom. Cover and let cook until the water evaporates and the bottom of the dumplings becomes crispy--approximately 5-7 minutes. When ready, slide the dumplings onto a plate. Cook in batches. Eat and enjoy immediately.

While dumplings are cooking, combine some soy sauce and spring onion into a small dish for dipping.
