Crockpot Overnight Apple Protein Oatmeal
Prep time: 15–20 minutes
Cook Time: 6–8 hours (overnight) Servings: 4
Ingredients
- 2 cups steel-cut oats
- 3 cups unsweetened almond milk
- 1 cup apple juice
- 1 cup water
- 2–3 apples, peeled, cored, and diced
- 1/4 cup maple syrup
- 1 scoop Sunwarrior Thermo Greens, green apple flavor
- 1 scoop Sunwarrior Lean Superfood Shake, vanilla
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon Sunwarrior Sea Salt
- 1 teaspoon vanilla extract
Toppings (optional):
- Chopped nuts (almonds, walnuts, or pecans)
- Dried fruits (raisins or cranberries)
- Additional maple syrup for drizzling
Directions
Spray the inside of your crockpot with a small amount of cooking spray or use a crockpot liner to prevent sticking.
In the greased crockpot, add all the ingredients except the toppings. Stir everything together until well combined.
Place the lid on the crockpot and set it to the low heat setting. If your crockpot has a "Warm" setting, you can use that for even gentler cooking.
Allow the oats to cook for 6-8 hours overnight. The slow cooking process will soften the oats, infuse them with apple and spice flavors, and create a creamy texture.
In the morning, give the oats a good stir. The oats should be creamy and ready to serve. If the oats are too thick for your liking, you can add a bit more almond milk, water, or apple juice to achieve your desired consistency.
Dish up into your favorite bowls and top with your favorite toppings.
Enjoy your warm and comforting bowl of vegan crockpot overnight oats with apples! These oats are not only vegan but also a nutritious and filling breakfast option.
If you have leftovers, store them in an airtight container in the refrigerator. You can reheat them in the microwave or enjoy them cold straight from the fridge.
