Coconut Mushroom Curry
Ingredients
- 2 tablespoons coconut oil
- 1 large onion, diced
- 3 cloves garlic, minced
- ½ teaspoon sea salt
- 1 teaspoon Sunwarrior Turmeric powder
- 2 teaspoons Sunwarrior Turkey Tail Mushroom powder
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- ¼ teaspoon cayenne pepper
- 2 cups chopped mushrooms
- 2 cups cubed sweet potato
- 2 cups vegetable broth
- 1 cup water
- 1/3 cup Sunwarrior Coconut Milk powder
- 1 can diced tomatoes
Directions
- Add coconut oil to a large pot, and place on medium heat. Coconut oil is best as it is able to withstand high heat.
- Add the chopped onion to the pot, stirring occasionally until the onion becomes translucent and turns slightly brown. This takes about three minutes.
- Add the garlic and cook for another minute. If the onions and garlic start to stick, add a little water to the mix.
- Add the turmeric, Turkey Tail mushroom, cumin, cinnamon, curry powder, and cayenne pepper to the mix and stir to blend all the different flavors. It will be very aromatic.
- Add mushrooms and sweet potato and stir, adding in a couple tablespoons of water. Add two cups of vegetable broth and let the veggies simmer for about 10 minutes until they start to become tender.
- Add the can of diced tomatoes, water, and the coconut milk powder and turn up the heat to medium high. Once it starts to boil, reduce to medium low heat and simmer for about 25 minutes, stirring occasionally.
- Turn off heat and let it sit for a little time and then serve.
- Serve over rice, or with a side or two of toasted Ezekiel bread.
