These cookies are extremely quick and easy to make. All you need to do is put all the ingredients together, form the cookies, and put them in the oven: job done! They make a delicious and healthy snack when you crave something sweet but want to stick to your diet. They are also a great post-workout treat because of their high protein content. Caution! They might disappear from the plate too quickly, but the good news is that you can make a new batch with easy-peasy effort! You just have to try them!
Chocolate Peanut Butter Protein Cookies
Ingredients
- ½ cup ground almonds
- 1 cup oat flour (or 100g oat flakes)
- 1 scoop Sunwarrior Active Protein PB Choco flavor
- 2 tablespoons coconut oil
- 2 tablespoons peanut butter
- 3 tablespoons maple syrup
- 30g chopped dark chocolate
- a pinch of salt
Directions
Start by preheating the oven to 350
If you don’t have oat flour, you can easily make it by simply blending oat flakes in a food processor or high-speed blender until flour forms.
In a saucepan, melt the coconut oil and add peanut butter when the pan is still hot. Mix until smooth (this will allow easier forming on the dough).
Put all the ingredients in a bowl and mix until dough forms. It should stick together but it shouldn’t stick to your hands. If it’s too wet, add more oat flour. If it’s too dry, add more coconut oil.
Lay a baking tray with greaseproof paper. Form 10-12 flat round cookies and put them on the tray. Put the tray in the oven and bake for 12-15 min or until golden-brown. Take the tray out of the oven, let the cookies cool and enjoy!
