Apple Cinnamon Protein Muffins
Ingredients
- 3 cups whole wheat flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 teaspoon sea salt
- 1 ½ cups pureed soaked dates
- ¾ cup refined coconut oil
- 1 cup prepared Sunwarrior coconut milk
- 1 tablespoon chia egg (1 tablespoon ground Sunwarrior Chia, 3 tablespoons water)
- 1 granny smith apple peeled, cored, and grated
- 1 scoop Sunwarrior organic Warrior Blend, Gingerbread flavor
Directions
- Mix dry ingredients together then cut in the coconut oil til crumbly,
- Mix the chia egg in separate bowl, add in the milk, add the wet ingredients into the dry, fold in the apple.
- Put into the size muffin tins you want. Sprinkle the cinnamon (or cinnamon crumble if you prefer) over the top.
- Bake at 375 deg for the amount of time needed for the size pan
- Enjoy! Makes 20–25 regular muffin size
