Vegan Cheese and Caprese Salad

Say Cheese! Because we’ve got all the vegan cheese going on here. This simple recipe for Caprese Salad with "Mozz" (mozzarella) is keeping it cheesy!


This may be cheesy, but I think it's great! Simple, quick, easy, and can be used for a variety of snacks and meals for any vegan. Grill or melt the mozz, chop the cheese, or spread it on toast, bagels, tomatoes, or veggies! Vegan cheese is a great way to get the party started and a great way to maintain good bodily function—thank you, cashews. Reap the benefits! Homemade vegan cheeses are better for you than dairy and healthier than store-bought.


Caprese Salad with "Mozz" (mozzarella)

  • 3–5 tomatoes depending on size
  • Fresh basil
  • Balsamic Vinegar Glaze of your choice
  • ¾ cup raw cashews
  • ¾ cup almond milk or cashew milk
  • ¼–½ teaspoon granulated garlic powder
  • ¼–½ teaspoon onion powder
  • 1/8 teaspoon turmeric
  • Optional 1 teaspoon tahini
  • 3 tablespoon lemon juice
  • ¼ cup melted coconut oil
  • 1 teaspoon salt
  • 1–2 fresh basil leaves (or dried)
  • 2 tablespoons + 1 teaspoon agar powder (sea vegetable used for thickening into gelatin-like consistency) Side note: if you cannot find this powder, they are usually sold at local Asian markets



Mozz Cheese

  1. Soak cashews 1 hour in milk for creamier texture (opt)
  2. Blend all ingredients except for water and agar powder on HIGH speed until creamy and smooth, scrape down side to make sure all the cashews are broken down and blend again and set aside
  3. Place water and agar powder in separate skillet/saucepan (be careful not to put too much) a little goes a LONG way. Heat over med-high until it turns to a boil. Stir frequently and reduce heat to simmer for nearly 1 minute and remove from heat. A gelatin-like consistency will begin to form. Set until cooled--Do not set aside for long.
  4. IMMEDIATELY add agar + water mixture to blender along with other ingredients and blend until smooth again
  5. Oil a container (I sprayed avocado oil). Immediately pour blended mixture into the container.
  6. Cover and refrigerate for a few hours or until set.

Caprese Salad

  1. Slice ripe tomatoes into thin slices
  2. Add thinly slice vegan mozzarella, fresh basil, and a drizzle of your fave balsamic vinegar/oil glaze along with a dash of salt and pepper

(optional) before adding cheese, you can roast the tomatoes for an extra "umph"
