Cilantro and Lime Rice Recipe
Ingredients:
- 1 cup brown rice
- 1 and ¾ cups water
- ½ cup cilantro
- 1 clove garlic
- 2 limes, juiced
- 1 tablespoon olive oil
- 2 tablespoons water
Directions:
- Put your brown rice in the rice cooker with water (you could also use a vegetable broth here) and let it do its thing.
- While that cooks, make the sauce for your rice by tossing cilantro leaves, a garlic clove, lime juice, olive oil, and a little water into a blender.
- Blend away and your sauce is ready in seconds. Mix it onto your rice and your meal is complete. Enjoy!
