Blueberry Sweet Potato Breakfast

Sweet potato aren’t just what’s for dinner! We’re cooking up breakfast with these sweet potatoes and blueberries!

I like to change up what I eat for breakfast sometimes, to add variety and find new breakfast favorites. Sweet potatoes are always stocked in my house especially in the winter and spring time when they are on sale. I’ve made lots of dishes with sweet potatoes for lunches, dinners, and desserts. However, I’ve never made a dish of sweet potato for breakfasts. That’s when I got the idea to make a sweet potato dish for breakfast. That is when I got the bright idea to mix sweet potato and Sunwarrior Vanilla Meal Replacement powder and boy, it was delicious! The  Sunwarrior illumin8 vanilla added so much flavor and protein. It also gave the sweet potatoes a hint of vanilla!

Benefits of Sweet Potatoes

Sweet potatoes are an excellent source of vitamin A, source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus.


Blueberry Sweet Potato Breakfast

  • 2 medium-sized sweet potatoes
  • 3 tablespoons honey (or agave syrup for our vegan friends)
  • 1 scoop of Sunwarrior illumin8 vanilla
  • ¾ cup blueberries, blackberries, or raspberries


Preheat oven to 350 degrees. Rinse the two sweet potatoes, poke some holes in the potato, and cook for 1 hour until cooked and soft.

While the sweet potato is cooking, mix the honey with  Sunwarrior illumin8 vanilla. Once the sweet potato has cooked, peel back the skin and mash up the sweet potato into a fine mixture. Once you do that, then add the Sunwarrior illumin8 vanilla with the honey to the sweet potato mixture.  Whip it up until it is nice and smooth. Then top with the berries, add as many berries as you want. The more the better. You can either eat it right away or refrigerate and warm up for breakfast in the morning.
