Vegans can eat sugar cookies, too! These vegan sugar cookies taste like holidays and childhood were meant to taste while being a much healthier option to the traditional sugar cookie!
Sugar cookies are a childhood staple. Kids love to decorate them and especially love eating them. You can make them into any shape you want, and they are ready for any holiday. A lot of the time the frosting is the best part for kids, but it is usually loaded with lots of refined sugar and flour and bad-for-you fats. But no more! The frosting and cookies are made with healthy whole wheat and coconut cream. The great thing is that these cookies are delicious!
The cookies are made from coconut oil. It will have a coconut taste if you use unrefined raw virgin coconut oil (which is not a bad thing in my book). But if you don’t like the taste of coconut, use the refined coconut oil. Coconut oil is high in natural saturated fats. Saturated fats are an essential part of your diet because they help your healthy cholesterol (HDL) increase. The cookies are also made with a whole wheat flour which has fiber and B vitamins.
The frosting is made from coconut cream. The coconut cream helps the frosting to be creamy and smooth without adding butter. Coconut cream does have fat, but it is considered the healthy fat that your body needs.
