Pretzels have always been one of my favorite snacks. But what I thought to be a healthy snack turned out to be a snack that was sky high in sodium. When I learned how to read food labels and the reality hit in that my go-to healthy snack wasn’t so healthy, I wanted to create one that was. Over the years I have been searching for a healthy pretzel. Time and time again, I’ve been disappointed. With the emergence of healthy eating and gluten-free sensitive’s, companies have been creating gluten-free and sodium free pretzels. When I first discovered them, I did a happy dance and devoured the entire package. I couldn’t have been more elated with this product. One night, I was experimenting in the kitchen with recipes, and one of the pretzels fell into my coconut butter mixture I was creating for a cupcake, I took the pretzel out and left it on a plate, meaning to throw it out later. When I was cleaning up, I saw that the mixture had solidified and voila, a new invention was created (the best ones are always by accident right?). Toiling around with the recipe I created a white “chocolate” protein pretzel. Now my life was really complete!
The best part of this recipe is that it uses coconut butter. Coconut butter is one of those miracle foods that has so many incredible health benefits such as helping to boost immunity and ward off viruses because of its antibacterial properties. Coconut butter also helps to burn fat in the body and is the perfect fuel to get the body going. Make sure when you are purchasing this product that it says coconut butter on the label. Coconut oil and butter are two different things so opt for the latter. Paired with Sunwarrior protein, you have yourself a delicious vegan, protein-packed, gluten-free snack.
