Going vegan does not mean going fun-food-free: Brownies are still on the menu ... or Blondies. You call them what you want; I’ll call them what I want.
I love brownies. I mean I absolutely FIEND for them. They are my favorite sweet treat, so when I turned vegan last year, I became saddened, thinking I would never be able to indulge in these little bites of heaven again. Oh man, was I ever wrong! Never assume you cannot enjoy your most favorite foods just because you aren’t consuming animal products. Most of the time, you can find a way to make your favorite recipes with little to no work added in besides making a stop to your local health food store or even a big chain grocery store! So don’t fret, I have a recipe for you that you can make over and over again, for holidays, special occasions, or just for a nice wine and dine night in with your friends or loved ones.
Here is my story of how I came up with my brownies:
The day before Easter, I was leaning on my kitchen counter feeling sullen, wondering what I could offer to my family that both me and them could enjoy! I was absolutely stressed over the thought of having to bake something non-vegan, and then an idea popped into my head: Go to the grocery store and check out the vegan substitutes they had for eggs and butter, then make the most delicious brownies anyone had ever tasted! That is just what I did. I made a concoction I like to call Vegan Orangey Brownies. They aren’t your chocolate, fudgey brownies. These are moist and white like a yellow cake, with a sweet glaze on top. They are definitely more blonde than brown, but they taste amazing no matter what you call them. These brownies require very little time and skill in the kitchen and will have you, your family, and your friends swooning.
