Vanilla Chia Pudding

Most people opt for that tub of ice cream or perhaps left-over dessert but what if you opened your fridge to a dish that could be breakfast, lunch, or dessert? This dish is so versatile, taking on the flavors of whatever you top or blend it with. This magical dish is chia seed pudding! Chia seed puddings take only 1 minute to make and an hour or so to set. This is one dessert that you won’t feel guilty polishing off every last morsel.

Chia seeds are magical black seeds from the earth that delivers a massive amount of nutrients without harboring calories. Chia seeds are packed with fiber, and when placed into a liquid, they become gel-like. This will expand in your stomach, creating a long-lasting satiated feeling. Many plant-based products are low in protein, but chia seeds come out on top with a huge amount of digestible protein. Chia seeds are very easy to incorporate into your diet, they can be placed in water, made into pudding, or sprinkled onto food.

The standard version of the recipe is made with chia seeds, almond milk, maple syrup, and vanilla powder. To add an intense berry flavor, you can puree fruits with your nut milk and then add the chia seeds. Peanut butter, jelly, and banana are the all-time classics. This beautiful marriage between these three ingredients makes a tantalizing and delicious chia seed pudding that will keep your energized all the way to lunch.   • 2 cups nondairy milk of choice
  • ½ cup chia seeds
  • ½ teaspoon vanilla extract or a vanilla bean, scraped
  • 1 tablespoon liquid sweetener of choice


  1. Add ingredients to a bowl and mix well. Add sweetener, and rest in fridge overnight
  2. Serve with desired toppings and enjoy!
