Super Espresso Chia & Pecan Protein Popsicles

This cool, sweet treat contains no dairy or gluten, but it is full of protein to kick start your day. Most people looking for a wake up jolt of caffeine in the morning pick up a hot cup of coffee, but as the weather starts to warm up . . . eventually . . . this will make for a perfectly refreshing treat on a summer morning.

Super Espresso Chia & Pecan Protein Popsicles

Ingredients:

Crunchy Chia Seed Espresso Ice Cream Layer

  • 3 tablespoons organic chia seeds
  • 2 tablespoons organic espresso powder
  • 1 cup unsweetened vanilla coconut milk
  • 1 tablespoon stevia sweetener

Creamy Nutty Vanilla Pecan Layer

Directions:

Combine chia seeds, espresso, coconut milk, and stevia in a blender and blend until smooth. Set aside in a separate bowl.

Combine pecan nut butter, coconut milk, protein powder, and vanilla extract in a mixing bowl and mix until smooth.

Pour chia seed espresso mixture and vanilla pecan butter mixture in popsicle molds, leveling them in layers, then freeze overnight.

The next day or so, serve ‘em up and enjoy!
