Vegan Mashed potatoes cauliflower with a sweet twist. This dish is a smooth and creamy crowd-pleaser that is like a party on your plate! You’re welcome!

This is the perfect side dish that is quick, easy, and tastes like a fluffy sweet cloud from heaven. Low in calories, low in fat, and high in essential nutrients, vitamins, fiber, and protein! I like this best cold, chilled in the fridge for a couple hours, then just scoop out a bit for a sweet treat!

INGREDIENTS

DIRECTIONS

Steam the cauliflower and sweet potatoes until they easily fall apart when pierced through using a fork. Then transfer to a big glass bowl, let cool 10–15 minutes and then mash with a fork until no big lumps are left. Add in the vanilla protein slowly, alternating ½ scoop powder with 2 tablespoons of almond milk, stirring thoroughly. Add in more almond milk at the end if you like your potatoes with a smoother texture! Let cool and place in the refrigerator covered.

You can also use a handheld mixer, following the same sequence of ingredients to add in as listed above.
