Vegan Mashed potatoes cauliflower with a sweet twist. This dish is a smooth and creamy crowd-pleaser that is like a party on your plate! You’re welcome!
Mashed Potatoes Cauliflower Twist
- 4 medium-sized white Japanese sweet potatoes
- ½ head cauliflower
- 3 full scoops of Sunwarrior Warrior Blend Vanilla Protein
- 1–2 cups vanilla almond milk (or coconut milk, soy milk, cashew milk)
Steam the cauliflower and sweet potatoes until they easily fall apart when pierced through using a fork. Then transfer to a big glass bowl, let cool 10–15 minutes and then mash with a fork until no big lumps are left. Add in the vanilla protein slowly, alternating ½ scoop powder with 2 tablespoons of almond milk, stirring thoroughly. Add in more almond milk at the end if you like your potatoes with a smoother texture! Let cool and place in the refrigerator covered.
You can also use a handheld mixer, following the same sequence of ingredients to add in as listed above.
