Healthy Oven Baked Onion Rings

Ingredients:

  • 1 large white onion
  • ½ cup whole wheat flour
  • 2 tablespoons arrowroot
  • 1 cup almond milk
  • 1 teaspoon apple cider vinegar
  • 1 cup gluten-free panko
  • 1 teaspoon kosher salt
  • 2 teaspoons olive oil

Slice up your onion. You’ll want some fairly thick cuts, about 3/4 inch. Try not to let that onion make you cry, but feel free to let it flow if you can’t help it. We hear it’s cathartic.

Separate those slices so you have as many rings as you can get out of your onion. Preheat your oven now to 450 degrees while you work on the batter. This part’s easy.

You simply stir together your wheat flour, arrowroot, almond milk, and apple cider vinegar. But you want those rings to be extra crunchy, crispy, and mouthwateringly savory, so you need a crunchy outer layer. Make this with olive oil, sea salt, and panko, mixed together. Go ahead and dip your rings in the batter and then use a spoon to sprinkle the crisping layer on. You’ll bake them for about 8 minutes, flip them, and then bake them another 6 minutes. They’ll come out crispy, golden brown, and ready to be devoured. Now you just have to come up with the perfect dip.
