My son’s good friend is gluten intolerant. For an upcoming holiday dinner, my son asked if I could find a way to make rolls for dinner. I was at a loss. There are so many ways to make gluten-free rolls. I scoured the internet, and most of the recipes call for a homemade gluten-free flour or a kind of flour that I had no access to. I didn’t want to buy a lot of different flours when I had no use for them really. After speaking with some people that are gluten free and reading many reviews on store-bought gluten-free flours, I settled for Bob’s Red Mill gluten-free flour. The rolls turned out fantastic, and my son’s friend was forever grateful.
Not all gluten-free flours are made equal. Some are more for breads, and some are more for cookies. If you find a flour you want to try, I would either talk to someone that is gluten free and knows their flours or read what the flour is best used for. The shape of your pan is very important. The dough is not like the dough for normal gluten rolls. They are very sticky. Choose a pan that will help the rolls stay upright. I used a pie pan that was perfect for these rolls. Also, you will not get the same results if you measure the flour with a cup. It is very important to use a scale.
I am by no means an expert. I’ve made this recipe and found it delicious even for those that aren’t gluten-free. If you need to become gluten free, this is a great way to start.
