Instead of going for that doughnut or chocolate éclair, indulge in something much more beneficial and satisfying for your health and hunger. Adding chunks of coconut biscotti gives these bars a nice, sweet crunch, and the high amount of muscle-building protein keeps your energy levels high. These berry and coconut treats can fit in your daily regimen with ease.
Very Berry Coconut Cookie Dough Bars

Ingredients:
Very Berry Mix:
- 3 scoops Warrior Blend natural protein
- 3 scoops Warrior Blend vanilla protein
- 2 tablespoons acai berry powder
- 1 and 3/4 cup unsweetened coconut milk
- 1/2 cup strawberries
- 1/3 cup blueberries
- 1/4 cup black berries
- 1/2 cup frozen bananas
- 1 and 1/2 tablespoons chia seeds
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon coconut flour
- 1 teaspoon lemon juice
- 7 pieces gluten-free coconut biscotti
Coconut Cookie Crust:
- 2 scoops Classic vanilla protein
- 1 cup fresh coconut water
- 1 and 1/2 tablespoon flax seeds
- 1/2 tablespoon chia seeds
- 1/2 teaspoon ground cinnamon
- 1 teaspoon ginger root
- 2 teaspoons vanilla extract
- 1/2 tablespoon tapioca starch
- 3 tablespoons shredded coconut
- 1/4 cup rolled oats
- 1/4 cup quinoa flakes
- 6 medjool dates
- 1 teaspoon lemon juice
Directions:
- Combine all ingredients for the very berry mix except the coconut biscotti in a blender and blend until smooth. Crush the 7 pieces of coconut biscotti into chunks.
- Pour berry mix in a large bowl and stir in crushed pieces of coconut biscotti. Set mix aside.
- Combine all ingredients for the coconut cookie crust in a food processor until clumpy and sticky.
- Line a 9x9 baking pan with parchment paper and press the coconut cookie mix evenly in pan.
- Pour berry mix over cookie crust and spread to cover crust completely.
- Place pan in freezer to set overnight.
- Take out, let thaw, and then cut into bars.
