Vegetarian Ginger Granola Breakfast with Yogurt

If you’re getting bored with your everyday breakfast and looking to try something new here’s a treat that’s quick and easy to make, but doesn’t compromise taste. This breakfast is so delicious that I sometimes eat it for dessert! It’s jam-packed with healthy nutrients as well as “good” bacteria from the yogurt. And good bacteria is something anyone who’s had to take antibiotics could benefit from.
Feel free to sprinkle hemp seeds on top to boost the protein content and add some toast on the side to make it an even more fulfilling and energy packed breakfast to start your day.
Ginger Granola Breakfast with Yogurt
Ingredients:
- ½ cup Ginger Molasses Granola
- 1 cup vanilla yogurt (my favorite is Whole Soy & Co.)
- ½ to ¾ cup vanilla soy milk
- 1 teaspoon maple syrup or honey (or to taste)
- ¼ cup walnuts or almonds, sliced
- 1 cup fruit of choice
Directions:
Mix yogurt and soy milk together with sweetener to taste.
Mix granola and nuts together.
Layer in the yogurt mixture followed by berries then the granola and nuts. Repeat until you reach the top or run out of ingredients. Serve immediately.
Or if you're in a hurry, just mix all the ingredients together and drizzle with sweetener.
