10 Minute Raw Chocolate Protein Bars
Ingredients:
- 1/2 cup raw cacao powder
- 1/2 cup Sunwarrior protein powder
- 1 tablespoon maca powder
- 2 to 3 tablespoons liquid coconut oil
- 1/3 cup coconut nectar syrup (or natural liquid sweetener of choice)
- 1/2 teaspoon sea salt
- 1/2 cup goji berries
- 1/2 cup mulberries (*what are mulberries? see below)
- 1/2 cup raw cacao nibs
Directions:
Place everything but the dried berries and cacao nibs in a huge bowl and mix together well with a fork into a chocolatey paste. If it’s too dry, add a bit more coconut oil. The goal is to get the consistency of (healthy) chocolate cookie dough. Before you add in the rest of the ingredients, try it. It should taste really good! If it doesn’t taste amazing, then add a bit more liquid sweetener until you love the taste.
Once evenly mixed up, add the dried berries and nibs. After evenly mixed, place in a baking dish or on a plate that has been lined with saran wrap or parchment paper (to prevent it from sticking once frozen). Use your hands to make sure that the bar mixture is flat and evenly distributed. Place in freezer for about an hour. Done! That’s it. You just made raw chocolate protein bars!
Cut into squares or bars after frozen and enjoy your own natural plant-based protein bars that are devoid of chemicals, dairy, and refined sugar. (You might need to let them de-thaw for about 5–10 minutes to make them easier to cut). They are delicious and very filling. Great for breakfast or snacks on the run, after a workout, or to satisfy a sweet craving guilt-free. Keep them stored in the freezer and eat when needed.
Optional add-ins:
- Superfood medicinal mushroom packets from Four Sigma Foods (chaga, reishi, lion’s mane, cordyceps, shiitake, maitake)
- 1 teaspoon superfood bee pollen
- 1/2 cup raw sunflower seeds
**What Are Mulberries?
An ancient fruit of Asia, mulberries are a product of the Morus alba tree. Mulberries are an excellent source of iron. Iron, being a component of hemoglobin inside the red blood cells, determines the oxygen-carrying capacity of the blood.
They also offer magnesium, potassium, riboflavin, calcium, vitamin C, and fiber. One of the mulberry's greatest health assets is its high concentration of resveratrol, an antioxidant currently being studied for its effects on heart health.
Add them to your raw chocolate protein bars, chis cereals, healthy granola, desserts, or smoothies.
