Wrap and Roll – Quick & Easy Coconut Veggie Wraps

Wraps and rolls are great for a quick and healthy lunch idea. Not too long ago I found these simple coconut wraps and I fell in love with them. They’re a good alternative to traditional sandwiches and are a great substitution for that oh-so-bright white bread we all remember so well growing up.
Coconuts are incredibly versatile and used in everything from our daily cuisine to our beauty regimes. You can eat them, drink them, and wear them on your body. Coconuts are highly nutritious, rich in fiber, and packed with essential vitamins and minerals.
These wraps have both a sweet and savory taste and are a must try.
Quick & Easy Coconut Veggie Wraps
Ingredients:
- 1 to 2 Pure Wraps coconut wraps
- 1 avocado
- 1 cup sunflower sprouts (or your personal favorite)
- 1 tomato
- 1 cucumber
- Pinch pink Himalayan sea salt
- Pinch pepper
Directions:
Slice the cucumber. Approximately 6 will fit the width of the wraps.
Slice the tomato. Approximately 3 slices will fit the width of the wrap.
Take a coconut wrap and spread the guacamole gently over half the wrap.
Along the bottom edge of the coconut wrap add a few slices of cucumber followed by a few tomatoes slices. Finish by topping it all with the sunflower sprouts.
Carefully roll the wrap and allow it to sit for 5 minutes before cutting. This will help soften it if need be to make it easier to cut cleanly.
To slice the wrap, use a long sharp knife and do not put too much pressure on the knife in order to prevent the filling from coming out of the wrap.
