Wickedly Delicious Halloween Recipes

Halloween is a big deal in my house. It started with visits from my kids’ aunt Pearl during the fall where she created super-creative dinners and activities. The kids are all mostly grown, but the tradition persists. Aunt Pearl has been a driving force for good with my children. She is the one who started them (and my husband and me) on the healthier path of eating and exercise. So we’ve tried to keep Halloween healthy while still making it feel like a treat. It isn’t always so much in what you serve but more in how you serve it.
We have a huge variety of meal options, but today I’m going to share just a couple.
Spewing Pumpkin
This guacamole dip incorporates all kinds of healthy, bursting-with-flavor awesomeness. Pomegranates are rich in vitamin C and K and are high in fiber. Avocadoes are rich in vitamin E and are good for your heart and your eyes, and they lower your cholesterol. Together, pomegranates and avocadoes create a flavor that is as colorful and fun as it is healthy.
Ingredients:
- 6 avocados, mashed
- ½ onion, chopped
- 1 cup pomegranate arils
- 1 lime, juiced
- 1 teaspoon sea salt
- Organic chips of your choice
Directions:
Combine all ingredients (except tortilla chips and a few arils) in a large mixing bowl, taking care to gently fold the arils in so they don’t become crushed in the mixing process.
Carve your pumpkin and place it at the top of a serving tray. Spoon the guacamole in front of the pumpkin to give the appearance that it has been spewed from its mouth (it's Halloween, so going for gruesome is okay). Sprinkle a few arils on top and pre-dunk a few organic tortilla chip wedges to complete the effect.
Devil’s Blood
Ingredients:
- 32 ounce bottle dark grape juice
- 1 cup apple juice
- ¼ cup pomegranate juice
Wicked Spirits
Ingredients:
- 32 ounce bottle orange juice
- 1 cup pineapple juice
Directions:
Fill one ice cube tray for each juice and freeze at least six hours before serving so the cube are nice and set. Refrigerate the rest of the juice until ready to serve. Add the frozen juice cubes at the time of serving, or plate them up to be used in individual glasses.
