Veggie & Hemp Swirl Protein Bar Cake

As a meal replacement on the go, we have a delectable dish that is not only scrumptious but extremely satisfying. My goal is to create healthy post-workout snacks that are low in sugar with no junk ingredients! These protein bar cakes combine veggies, raw plant-based proteins, and complex carbohydrates in a single snack to give you a reward after the grind of everyday life. This is also the perfect snack for those busy days you don’t want to fall short in your healthy eating but need something fast. Crunchy and sweet, almost like a muffin, this is something you’ll want to try for yourself.
Veggie & Hemp Swirl Protein Bar Cake
Prep time: 45 min, bake time: 12–15 min
Ingredients:
Protein Cake Batter:
- 1 scoop Sunwarrior Warrior Blend vanilla protein
- 2 scoops Sunwarrior Classic vanilla protein
- 3 tablespoons Ormus Supergreens natural
- 2 tablespoons organic hemp protein powder
- 1/4 tablespoon organic sesame seeds
- 1/2 cup filtered water
- 1/2 cup homemade organic apple sauce
- 1/3 cup organic coconut milk
- 2/3 cup organic frozen green peas
- 1/8 cup organic raw pumpkin seeds
- 2 tablespoons ground organic walnut butter
- 1/2 teaspoon organic cinnamon
- 1 scoop Sunwarrior Warrior Blend vanilla protein
- 2/3 cup organic coconut milk
- 1 tablespoon organic coconut oil
Directions:
Pre-heat oven 325° F.
Protein Cake Batter:
Combine all ingredients for the protein cake batter in a large bowl and stir until well incorporated. Distribute cake batter in two 9x9 baking pans lined with parchment paper and spread evenly. Place the two baking pans into the oven and bake for 12–15 minutes.
Once brown but still slightly moist, remove cakes from oven and set aside to cool.
Combine all ingredients for the crème filling in a blender and blend until smooth.
Once cake layers have cooled completely, pour crème filling on top of one cake layer and spread throughout the pan. Carefully place 2nd cake layer on top and refrigerate for a few hours.
Enjoy it freshly chilled from the fridge or serve it up warm.
