Greek Garbanzo Bean Salad
Ingredients:
1 Romaine lettuce head or preferred greens, chopped
1 15 oz can of garbanzo beans or soak your own
3 stalks celery, diced
1 medium tomato, diced
3 tablespoons fresh parsley, minced
2½ tablespoons fresh mint, minced (use less, about half, if using dried mint)
4–5 tablespoons olives, diced
3 scallions, finely minced
3 cloves garlic, crushed
3 tablespoons fresh squeezed lemon juice
2–3 tablespoons olive oil
Pinch of Himalayan crystal salt
Pepper to taste
¼ to ½ cup vegan feta
Directions:Set aside base greens.In a separate mixing bowl, add and mix all the other ingredients.Add base greens to individual bowls and heap with garbanzo salad mixture. Top with extra chunks of vegan feta.
