Mango Rice Paper Rolls
June 05, 2015Here’s a familiar and fun way to get your daily veggies. These mango rolls are colorful, delicious, and healthy. Share some with your family!
Want to impress dinner guests? Or maybe you want to incorporate more raw vegetables into your diet. These delicious rolls are gluten-free, simple, and flavorful (might I add they look beautiful too!). Enjoy as an appetizer, a side dish, or even a main!
Mango Rice Paper Rolls
Ingredients:
- 1 mango, cut into thin strips
- 1 cup cucumber, sliced into matchsticks
- ½ cup fresh mint leaves
- 4 ounces rice noodles (very thin)
- 1 cup bean sprouts
- 1 cup shredded carrots
- 3 scallions, julienned or chopped diagonally
- Rice paper wraps *see note
Sauce:
- 1 tablespoon San-J tamari
- 1 tablespoon sesame oil
- 2 tablespoons rice vinegar
- 1 teaspoon brown rice syrup
- 1 clove of garlic, minced
Directions:
Turn off heat and add the rice noodles. Let them soak for 2 minutes, stirring occasionally. Drain the noodles and run them under cold water. Set aside in separate bowl.
Fill a pie plate or large, wide bowl with warm water.
Place the rice paper wrappers, two at a time, into the water until they become flexible, about 30 seconds to 1 minute.
Carefully remove wrappers from water and lay flat on clean surface.
In the lower two thirds of wrapper place a tablespoon of noodles, 2 strips of mango, cucumber, mint or cilantro leaves, and bean sprouts.
Fold the left and right sides of the wrapper over the filling, then take the bottom of the wrapper and begin to roll.
Keep wrapped and chilled until ready to eat.
To make the sauce, simply combine all sauce ingredients. Serve with the mango rolls.

Store-bought sauce usually contains lots of sugar, sodium, and other processed ingredients, and our bodies get tricked into thinking they’re getting sufficient nutrients. By making the sauce yourself, you can control what goes in and make sure they are clean ingredients like natural sweeteners (e.g. maple syrup, coconut nectar, brown rice syrup) and healthy fats (e.g. sesame oil, olive oil, coconut oil).
Note:
White rice paper wrappers are readily available at any grocery store and in moderation are still delicious and gluten-free. It is not always easy to find brown rice paper wrappers. A company called Star Anise makes brown rice wrappers and you can order them online from www.vitacost.com .
