Macho Salad: The Wedge with Vegan Bacon and Creamy Dressing

By Michele the Trainer

We don't usually associate salad with men, but they like it too! So get out your stainless steel plates or bowls and let’s create a macho salad for the men.

You guys love a salad that’s filling and contains a lot of your favorite visual foods, such as nuts, seeds, tomatoes, and olives, right? And though we all tend to be picky about our dressings, the tahini and Dijon mustard make this one a top choice. Or if tahini isn’t your thing, you can use cashew butter, and cashews are also a great garnish for the salad.

If you’re making this for someone else, ask your audience what they like before you start and adjust. If you use all the things they love, with a strong presentation, they will love this salad! If you’re making it for yourself, well, you know what you like!

Macho Salad: The Wedge with Vegan Bacon and Creamy Dressing

Macho Salad Dressing:

Blend in high speed blender:

  • ½ cup or more raw organic tahini or organic cashew butter
  • ½ cup organic almond or cashew milk
  • ¼ cup Bragg’s apple cider vinegar
  • 2 cloves organic garlic
  • 1 to 2 tablespoons organic Dijon mustard

You want a yogurt-like (ranch dressing thick) consistency. You can add a bit of water or more seed/nut butter to adjust.

Pour dressing into container and then fold in:

  • ½ teaspoon freshly ground organic black pepper, add to taste
  • ¼ cup fresh organic chives, chopped
  • ¼ cup organic fresh parsley, chopped
  • Pinch of quality sea salt, to taste

What’s in the Salad?

Your salad can be a lettuce wedge served on a plate solo (cut an organic Iceberg lettuce head into 4 wedges) or baby heads of organic romaine served on a plate, or torn up organic romaine hearts served in a large bowl. Romaine offers more nutrients than Iceberg. Also check out organic red leaf or organic butter lettuce. Organic spring mix will work here too but it just doesn’t sound as macho.

Garnish

Garnish is as important as headlights on an automobile. Get to garnishing!

  • Organic tomato wedges
  • Organic olives
  • Organic cashews
  • Organic sunflower seeds
  • Organic pumpkin seeds
  • Chopped avocado
  • Coconut bacon (tear into bits)
  • Tempeh bacon (cut into bits)
  • Rustic organic vegan croutons
  • Chopped chives

Keep your macho black pepper grinder nearby. It’s fun to use it on this salad!
