Fruity Granola Flax Protein Cookie Squares

Here's another protein snack that’s ready to travel. Give this fruity, nutty treat a try.

Here’s a treat to knock your socks off! Stepping out of the norm of the typical double chocolate chip brownie or rocky road bar, we have here a delightful high protein cookie that doesn’t have the overwhelming sweetness of chocolate. These nutty superfood squares have a naturally fruity filling, and granola bits make up a crispy bottom crust. It’s almost like a pie, but without the heavy calories, who says you can’t have a piece and eat it too?

Fruity Granola Flax Cookie Squares

Prep time: 30 min

Ingredients:

Nutty Fruit Layer:

  • 2 scoops Sunwarrior Warrior Blend vanilla protein
  • 2 scoops Sunwarrior Warrior Blend natural protein
  • 1/2 cup organic gluten-free buckwheat groats
  • 1/4 cup organic macadamia nuts
  • 1/3 cup organic apple, sliced
  • 2/3 cup organic frozen banana, sliced
  • 1/4 cup mixed blueberries, blackberries, and strawberries
  • 1/2 teaspoon organic ground ginger
  • 1/4 teaspoon ground vanilla bean
  • 1/2 cup filtered water
  • 1 cup organic coconut milk

Crispy Granola Crust:

  • 1 scoop Sunwarrior Warrior Blend vanilla protein
  • 1/2 cup organic almond, flax, granola mixture
  • 2 tablespoons organic gluten-free coconut flour
  • 4 tablespoons ground organic flax seeds
  • 1/2 cup filtered water
  • 1 teaspoon organic ground cinnamon
  • 1/4 cup organic mangos, sliced

Directions:

Pre-heat oven to 325° F.

Nutty Fruit Layer:

Combine all ingredients for the nutty fruit layer in a large bowl and stir until well incorporated. Set aside.

Crispy Granola Crust:

In a food processor, combine all ingredients for the crispy granola crust and process until crumbly and sticky.

Next, pour crispy granola mixture in a 9x9 inch baking pan and press down into a flat layer.

Once set, pour the nutty fruit mixture on top and spread levelly. Store in the refrigerator for several hours to set.

Cut into squares and take them on-the-go! Store in the fridge if you'll be eating them within the week, or put them in the freezer for long-term treats!
