Holiday Hot Chocolate
December 15, 2015When Jack Frost is nipping at your nose, a little holiday hot chocolate will warm it up again. Keep this recipe handy for frightful weather.
Winter means coolers temperatures and chilly nights. Luckily, this drink will warm you up from the inside out. This is a great way to kick start the holiday season. Here in Toronto, I’ll be craving something warm and soothing to carry me through snowy months.
Chocolate and peppermint is my favorite combination. I used to buy a chocolate peppermint latte from my local coffee shop, but it was loaded with way too much sugar. I had to come up with a healthier alternative that tasted equally as delicious.
All you need is a few minutes and a grumbling stomach for this soothing drink. This drink will certainly brighten your day
Holiday Hot Chocolate
Ingredients:
- 1 cup brewed coffee (decaf or regular)
- 1/3 cup organic dark cocoa powder
- 1 cup homemade or store bought cashew milk
- 2 tablespoons coconut sugar
- 1 teaspoon peppermint extract
Directions:
Mix coffee (you can use decaf is you're watching your caffeine intake), dark cocoa powder, cashew milk, coconut sugar, and peppermint extract in a saucepan over medium heat.
You can stop there but come on, who doesn’t love whipped crème? I used a can of coconut whipped crème that I found at my local health food store. If you can’t find it, you can take a can of full fat coconut milk and place it in the fridge overnight. Open the can and you will notice that the crème and water will have separated. Scoop out the crème and place it in your mixer. Add 1 teaspoon vanilla extract and let it whip for 2–4 minutes. It should be light and airy at this point. Remove from mixer and there you have it, whipped coconut crème! Add a few pieces of crushed candy cane as I always do this time of year. It’s nostalgic of Christmas, warm slippers, fireplaces, and love.
