It is low in saturated fat and high in anti-inflammatory properties. The whole wheat flour is high in protein and dietary fiber, and it’s more sustaining than its boring white counterpart. You can sneak zucchini into these brownies, and the enjoyer will be none the wiser.

Vegan Zucchini Brownies
- 2 flax eggs (2 tablespoons ground flaxseed + 6 tablespoons water)
- 1 cup coconut sugar
- ¼ cup coconut oil
- 1 tablespoon vanilla extract
- 1 cup whole wheat flour
- 2 tablespoons ground flaxseed
- 6 tablespoons Sunwarrior Cacao powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 2 cups packed, grated zucchini
- ½ cup vegan chocolate chips (optional)
Directions
Preheat oven to 350 degrees. Grease an 8x8 pan and set aside.
Next, take grated zucchini and puree it in a food processor until almost liquid. Set aside.
Whisk the eggs, sugar, oil, and vanilla in a medium-size bowl. Then add flour, cocoa, baking soda, and salt. Mix well. The batter will be very thick. Add zucchini and mix well. Then add chocolate chips if using.
Pour into prepared pan and bake for about 40 mins or until a toothpick inserted in the center comes out with moist crumbs.
Let brownies cool before eating.
