Vegan Irish Soda Bread

Vegan Irish Soda Bread
Instructions
- 3–3 ½ cups flour
- 1 teaspoon Sunwarrior Sea Salt
- 1 teaspoon baking soda
- 1 ½ cups soy milk
- 1 ½ tablespoons lemon juice
Directions
- Preheat oven to 350
- Prepare “buttermilk” by combining soy milk and lemon juice. Set aside
- In larger bowl, combine all dry ingredients
- Once the oven is preheated, stir in “buttermilk” mixture until the dough begins to hold together. Dough will be sticky and clumpy, more like American biscuits. If it feels too sticky, add a little more flour but be careful since too much flour can result in dry, dense bread. Dump the lump onto a floured surface and knead just enough to get a ball of dough (a half minute at most).
- Place the ball onto a baking sheet lined with parchment paper. Flatten the ball down slightly and cut across the dough at right angles (so you make an X). Cut deeply without cutting all the way through. This helps it rise properly. Place baking sheet in preheated oven. Bake for 10 minutes, then lower oven temperature to 300 degrees and bake an additional 35 minutes.
