Red Velvet Valentine Brownies

A red velvet brownie that is so velvety and brownie-fantastic that it’s gotta be love, which means it’s perfect for Valentine’s Day!

Looking for a healthy alternative recipe for some Valentine’s Day treats? This vegan and paleo twist on red velvet brownies is both festive and healthy. There is no food coloring in this recipe thanks to nature’s natural red food coloring: beets. Beets also contain a sufficient amount of B Vitamins, Vitamin C, fiber, and potassium, which means it's spreading a little extra love on your health!

Red Velvet Valentine Brownies

Ingredients

** If you would like to make the recipe a bit sweeter, add 1 tablespoon of maple syrup, a few drops of stevia, or a flavored milk.

Directions

1.) Heat oven to 375F. Grease a baking dish (I used 8x8) with coconut oil or line with parchment paper.

2.) The beets can either be fresh roasted, or you can use a prepackaged brand . Once cooked, puree the beets in a food processor.

3.) Combine beets, nut butter, cocoa powder, Slim Collagen Boost, flaxseed, almond milk, beetroot powder, cinnamon, vanilla extract, and baking powder.

4.) Once mixed thoroughly, pour the batter evenly into a baking dish. If you wish to add any toppings, now is the time. Some topping ideas include chocolate chips, cacao nibs, or coconut flakes.

5.) Place in the oven and bake for 20-25 minutes. Remove from oven, dust with cocoa powder. Let cool for 5-10 minutes. Enjoy - and spread the love this Valentines Day!
