Pumpkin Coconut Overnight Oats

Pumpkin! Not just for pie anymore! Here is pumpkin for breakfast with these quick, easy pumpkin coconut overnight oats!

Overnight oats are one of the most perfect ways to start the day. You can make them the night before. So, when you wake up early, not knowing your left from your right, or you wake up rushed, barely able to brush all your teeth, you have to do practically zero work to enjoy a healthy, delicious breakfast. They’re also portable, which is sweet if you want to take them on your morning commute (and make everyone on the bus, train or traffic jam jealous)! And of course, they’re really filling! Their talent is keeping you going all morning long. The thing is: I’m only talking about overnight oats on their own. But now add some pumpkin, which on its own is mother nature’s gift to earth, and you’ve just got a full home-run. If you don’t believe me, make this recipe!

Ingredients

  • ⅓ cup oats
  • 1 tablespoon Sunwarrior Chia Seeds
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons coconut flakes
  • 1 teaspoon vanilla
  • 1 teaspoon maple syrup
  • ½ cup almond milk
  • ¼ cup pumpkin puree

Additional & Optional Toppings:

- granola

- almond milk

- coconut sugar

- fresh or dried fruit

Instructions

  1. One by one, add all ingredients to a jar. This can be a ball jar, an old nut butter jar or tupperware. (Old pickle jars not recommended.)
  2. Mix well, making sure to get all the way to the bottom of the jar.
  3. Secure the lid and and pop into the fridge, letting it rest while YOU rest. (Ideally, let it sit overnight. In a pinch, 20 - 30 minutes is all it really needs.)
  4. In the morning, remove the lid, give it a few nice big stirs and add in your desired toppings.
  5. Take it with you to work, school, errands, the gym, your commute, or to your kitchen table and ENJOY!
