Chocolate Raspberry Chia Pudding
January 20, 2021If you haven't heard about chia seeds well let me introduce you: Chia seeds are the richest plant based source of Omega 3, dietary fiber, protein and antioxidants.
A staple in my kitchen, this complete superfood is very versatile and can be used to thicken smoothies, make breads, crackers and puddings.
Chia is also a favorite among athletes. Several studies with long distance runners and triathletes have shown superior performance in the groups that ate chia seeds, over the groups that did not.
The chia base, coconut, cashew butter, and chocolate comes together perfectly to satisfy anyone’s sweet tooth.
Chocolate Raspberry Chia Pudding
Ingredients:
- ¼ cup chia gel
- 1 scoop chocolate Sunwarrior Classic protein powder
- 2 tablespoons cashew butter
- 2 tablespoons coconut butter (my favorite is Artisana)
- 1 tablespoon mesquite powder
- 1 teaspoon sweetener of choice (raw honey, maple syrup, agave, or stevia) – optional
- Water as needed
- ¼ to ½ cup raspberries
- Coconut chips for topping
Directions:
For chia gel: soak chia seeds with enough water to cover the chia seeds. Let the chia and water soak for a minimum of 15 minutes.
In a blender add chia gel, protein powder, cashew butter, coconut butter, sweetener, and mesquite powder; add enough water to make a thick pudding consistency. Blend all ingredients together. Pour pudding in a glass container and top with raspberries and coconut chips.
For real chocolate lovers add 1 to 2 teaspoons of raw cacao powder with the rest of the ingredients if you wish.
Chia gel can also be made ahead of time and left to soak in the refrigerator overnight.
