Chewy Vegan Gingerbread Protein Cookies
Ingredients
- ½ cup of pumpkin puree
- 1 scoop Sunwarrior Warrior Blend, gingerbread flavor
- ¼ cup coconut flour
- ¼ cup almond milk
- ½ cup nut butter of choice
- 1 tablespoon molasses
- 1 tablespoon maple syrup
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 tablespoon ground flaxseed
- 2 tablespoons Sunwarrior organic Cacao powder
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- ¼ teaspoon cloves
- ⅛ teaspoon nutmeg
Directions
- Preheat oven to 350F and set aside a baking sheet lined with parchment paper.
- In one bowl, combine the wet ingredients
- In another bowl, combine the dry ingredients
- Mix the wet and dry ingredients together to create a dough.
- Scoop out the dough and roll into a ball. Evenly distribute the dough on the baking sheet, and press down to flatten each cookie out.
- Bake for 12-15 minutes. Let the cookies cool for another 10 minutes – then enjoy 😊
