Oh, how life is sweet again. Growing up, it was all about quick, easy breakfasts such as cereal and Pop Tarts. And, as an adult, I felt a nostalgic craving to return to my childhood treat. Going to the grocery store and picking up a box of Pop Tarts, I was in shock over all the added sugars and ingredients in one of my favorite childhood breakfasts. This discovery set me on a mission to create not only a Pop Tart that was vegan but one that also had health benefits. After countless trial and error experiences, I landed on a perfect ratio of ingredients to make these delightful treats. This recipe is gluten free, grain free, and vegan. It’s very simple to make, and your kids will absolutely love it. You can rest assured that your little ones will be well nourished with these treats.
We use a mix of both coconut oil and almond butter which have incredible health benefits. Almond butter will increase your iron levels and give you a boost of calcium where coconut oil is anti-viral and anti-inflammatory—both incredibly useful if you’re feeling under the weather or have had a hard workout!
What makes this recipe so great is that the dough doesn’t need to be leavened or watched for hours. This recipe is a one bowl recipe that comes together in less than five minutes. I used a store-bought jam from my local health food store without added sugars, but you can make your own very easily as well. We didn’t add any sugar to the recipe, but, if you want, add a touch of stevia to the dough. For fun flavor variations, you can use Classic Plus chocolate or Classic Plus vanilla protein instead of the natural flavors.
