Vegan Funfetti Cupcakes

Vegan Funfetti Cupcakes

Dry Ingredients

  • 2 cups spelt flour
  • 2 scoops Sunwarrior Superfood Protein + Mushrooms, vanilla birthday cake
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 pinches Sunwarrior Sea Salt
  • ¼ cup coconut sugar

Wet Ingredients

  • 1 cup almond milk, unsweetened
  • ½ cup melted BUTTER FLAVORED COCONUT OIL
  • ½ cup maple syrup
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon vanilla extract

Bonus Ingredients

  • Vegan Sprinkles, as many as you like
  • Vegan Frosting, the healthiest kind you can find at your health food store (many organic frostings are sold now!)

Directions

  1. Preheat the oven to 350 degrees F.
  2. Mix the dry ingredients into one bowl.
  3. Mix the wet ingredients into another bowl.
  4. Mix the wet ingredients into the bowl with the dry ingredients.
  5. Add sprinkles and mix to incorporate!
  6. Line your cupcake pan with cupcake liners and then divide the batter equally among all 12 cupcakes.
  7. Bake for 20 minutes.
  8. Remove from the oven and let cool.
  9. Then spread your frosting on top of your cupcakes and immediately sprinkle with sprinkles.
